My tasty dinner plan

My husbands out of town tonight and I’m on my own for dinner. It’s starting to get a little late for dinner but I think I’ve come up with an idea as to what I want for dinner.

You see … I’ve already got some herb and wild rice made up in the fridge, and there’s also some fresh corn on the cob that I can just pop into the microwave for a few minutes to cook.

All I need is an entree. Lucky for me, I happen to have some frozen chicken “tornados” in the freezer. They’re chicken patties? wrapped in bacon and their perfect for cooking on the electric grill which is just what I plan to do with mine. Yum. Now doesn’t that sound like a perfect meal?

Oh and I even have some desert. I happen to have some raspberry canes in my backyard and they’re producing lovely raspberries right now. I have just enough for a small bowl after my meal. I’m looking forward to tasting them.

A late, but a good dinner

Wow I’m full! We just finished eating a very late dinner. I made a baked boneless skinless chicken breast, a mix of wild and white rice, peas, and roasted red peppers. We also had a green salad with feta cheese and a raspberry vinaigrette. Yummy.

I think once our TV show if over I’m going to go upstairs and fill up the bath tub, have a half an hour soak and then go to bed. Hmmm … maybe on the other hand, after that big meal perhaps I should be going out for a walk or doing some research on the best fat burners because if we keep eating like that I might need them!

I’m pleasantly full. I just wish we’d eaten earlier. I hate eating so late.

We’re almost done eating all the cookies I baked in December

My husband and I are finally clearing out some of the baking that I did in December. Not that there was anything wrong with it mind you … just that I went into baking overkill …. cookies, cookies, cookies everywhere!

This evening after dinner I took a look on top of our fridge and pulled down four freezer bags were I’d stored some of the cookies that I’d baked. The bags I took down only had a couple of cookies on them and lots of crumbs so we finished off a few of the cookies and crumbs and got rid of two of the bags. Maybe we won’t need to look for diet pills that work if we can get rid of the cookies soon.

I don’t think I’ll go on any more baking sprees for a while.

My husbands favorite dinner – lately

This evening we’re having what’s quickly becoming one of my husband’s favorite dinners. It’s pretty easy to make too.

We’re having a mix of long grain and wild rice, peas and chicken. I tend to eat these three food items separately but my husband likes to cut up his chicken and then he mixes the peas, rice and chicken together and he swears that it tastes like chicken fried rice. I’ve tasted his mix and it’s true – it does tasted like chicken fried rice … maybe I should mix mine up too.

This evening I think I’m going to pull out one of the desserts that I made two weeks ago – Zucchinni bread – perhaps cut some up and put it in the center of the table on a glass tile and we’ll have it for dessert after dinner. Yum.

Speaking of dinner … it’s after 8 pm … I’d better get cooking!
